Blueberry popsicles are a refreshing and healthy treat, made with just a few simple ingredients. Fresh blueberries, creamy Greek yogurt, and just a touch of maple syrup for a naturally delicious frozen snack. Perfect for hot summer days or a healthy dessert any time!
In a blender, combine blueberries, maple syrup, and vanilla until pureed
Combine the blueberry mixture with the yogurt in a bowl.
Fill popsicle molds with the popsicle mixture.
Insert popsicle sticks, cover, and freeze four hours or overnight.
Let the popsicles sit at room temperature for 5 minutes before running them under warm water to loosen them from the molds.
Notes
Blueberries. Use fresh, ripe blueberries, or use frozen blueberries. If you use frozen berries, you don't have to thaw them, but might need extra blender time.
Fruit. This easy popsicle recipe can be used with other berries too. Try it with blackberries, raspberries, of a combination of berries. You can use other fresh fruit like peaches or cherries, too.
Sweetener. Maple syrup is optional, especially if your berries are very sweet. You can also use honey or agave syrup instead.
Yogurt. I recommend using full fat Greek yogurt for maximum creaminess, protein, and tang. However, you can make these popsicles with regular yogurt, or you can make them vegan by using vegan yogurt or full fat coconut milk. You can also use vanilla yogurt or blueberry yogurt. Just omit the maple syrup and vanilla extract.
Blueberry swirl popsicles. If you want a swirl effect, instead of combining the blueberry mixture completely with the yogurt, just gently swirl it in.
Storage. Put the frozen popsicles in a re-sealable freezer bag and freeze for up to six months.
